Cauliflower Mash
INGREDIENTS
- 1 large head cauliflower 
- 1 small onion diced 
- 1-2 Tblsp olive oil 
- salt and pepper, to taste 
METHOD
- Remove greens from the head of cauliflower and break the cauliflower up into large florets. 
- Steam cauliflower until it is very tender. 
- In a separate pan sauté the onion until they are caramelised. Set aside. 
- Place cauliflower and onions in food processor or a blender and blend. 
- Slowly add olive oil and continue to blend until the cauliflower reaches the consistency you like (this depends on your taste and the size of the cauliflower). 
- Add in salt and pepper, to taste. 
- Serve with your favourite protein.
