Chicken or Beef Vegetable Stirfry
INGREDIENTS
500g chicken breast or beef cut into cubes
1-2 Tbsp olive oil
2 large heads broccoli cut into florets
1 small onion sliced into strips
200g button mushrooms thickly sliced
2 large carrots julienned
pepper to taste
SAUCE:
1 cup chicken stock
4 Tbsp Soy sauce
2 Tbsp brown sugar or honey
1.5 Tbsp sesame oil
1.5 tsp fresh ginger grated
INSTRUCTIONS
- In a bowl combine all of the sauce ingredients and mix to dissolve sugar. Set sauce aside. 
- Cut chicken or beef into bite-sized pieces and season lightly with pepper. 
- Heat a large pan or wok and add 1 Tbsp oil. Add chicken or beef in a single layer and let it get a good sear then stir fry until golden brown and cooked through. 
- Remove from pan and keep in bowl. 
- In the same pan, add another 1 Tbsp oil along with broccoli florets, julienned carrots, sliced onion and sliced mushrooms. Stir fry 4-5 minutes or until mushrooms are softened then reduce heat to a simmer. 
- Pour sauce over vegetables and simmer for 4-5 minutes. 
- Return chicken or beef to the pan and stir another 1 minute or until heated through. 
- Serve on basmati rice, cauliflower rice or mix through zoodles or Konjac.
