Mixed Vegetable Soup
INGREDIENTS
- 3 carrots roughly chopped 
- 2 heads broccoli cut into florets 
- 1 leek roughly chopped 
- 2 sticks celery roughly chopped 
- 3 zucchinis roughly chopped 
- ¼ butternut cubed 
- vegetable or chicken stock to cover - ( 1 cube per 250 ml water) 
- 1 Tbls olive oil 
- Salt and pepper to taste. 
INSTRUCTIONS
- Heat 1 Tbls olive in pot. 
- Roughly chop vegetables. 
- Mix and Sauté veggies for a few minutes. 
- Cover with stock so vegetables are just floating. 
- Bring to the boil, then simmer for ~40 min. 
- Add salt and pepper to taste.
