Zoodles or Pasta with Roasted Cherry Tomatoes
INGREDIENTS
- 1 kg cherry tomatoes halved 
- 3-4 cloves garlic, crushed 
- 80g Parmesan cheese, grated 
- 4 Tblsp olive oil 
- Fresh Basil leaves chopped 
- Salt and ground black pepper to taste 
- 500g penne pasta OR 4 large zucchinis spiralled 
METHOD
- Preheat oven to 200 degrees Celsius. 
- Place halved tomatoes in a baking dish. 
- In a bowl, mix the garlic, cheese, salt and pepper until combined. 
- Spoon over tomatoes. 
- Pour olive oil evenly over tomatoes and bake for ~ 35min until browned. 
- Whilst tomatoes cooking, boil pasta in salted water or stirfry zoodles in a fry pan. 
- Drain pasta/zoodles. 
- Add pasta or zoodles to tomato mixture in baking dish and combine. 
- Sprinkle basil over and serve whilst hot.
