Chicken/Beef Fajitas
INGREDIENTS
- 1 kg beef or chicken cut into strips 
- 1/4 cup lime juice 
- 1/2 cup olive oil 
- 1 Tbsp brown sugar 
- 1 large red capsicum thinly sliced and seeds removed 
- 1 large green capsicum thinly sliced and seeds removed 
- 1 clove garlic crushed 
- 1 tsp Mexican spice 
- Ground salt and pepper to taste 
Tomato salsa
- 3 firm tomatoes chopped 
- 1 medium onion chopped 
- 1 tsp sugar 
- 1 tsp salt 
- 1/3 cup lime or lemon juice 
Guacamole
- 2 large ripe avocados 
- 2 cloves garlic crushed 
- 2 tbsp lime or lemon juice 
- 1 tsp salt 
- 1 tsp cracked pepper 
- 1/4 tsp chilli flakes ( optional) 
INSTRUCTIONS
- Combine sugar, lime juice and salt in bowl. Let sugar dissolve completely in the liquid. 
- Add the tomatoes and onion combining well. Set aside in fridge until need. 
- Combine the lime juice, oil, brown sugar, garlic, Mexican spice, salt and black pepper and pour over meat or chicken and marinate for at least 2 hrs. 
- Start frying chicken/meat and capsicums on fry pan just before eating. 
- Serve chicken/meat, tomato salad and , guacamole in warmed up mini tortillas, Simpson or mountain bread wraps or lettuce cups.
