Granny Mimi's Chicken Soup
INGREDIENTS
- 4 chicken wings or any chicken pieces 
- 2 Carrots roughly chopped 
- 2 medium stalks Celery roughly chopped 
- Large Handful Continental parsley roughly chopped 
- 1 onion peeled and halved 
- 1 leek roughly chopped (only white part) 
- 4-5 chicken stock cubes 
- 3 vegetable stock cubes 
- Water 
INSTRUCTIONS
- Place chicken pieces in large pot. 
- Throw in onion, carrots, celery, leek and continental parsley. 
- Fill pot with water. 
- Crumble chicken and vegetable stock cubes. 
- Bring to boil. 
- Cover with lid and simmer for 40-45 min until vegetables soft. 
NOTES
- I remove chicken wings as I prefer a broth, however you can also remove chicken pieces and shred the chicken through the soup.
