Pistachio Crusted Fish
INGREDIENTS
- 4 X 200g fresh white fish ( I use blue eye cod or barramundi but can be done on salmon too) 
- 2/3 cup unsalted shelled pistachios 
- 2-3 sprigs fresh thyme 
- 1 clove garlic (optional) 
- Dijon mustard 
- Olive oil 
- Salt and pepper to taste 
INSTRUCTIONS
- Preheat oven to 180 degrees Celsius. 
- Line a baking tray with baking paper. 
- Place the fish fillets on the tray. 
- Blend the nuts, thyme and garlic in a food processor. 
- Brush fish with olive oil. 
- Sprinkle salt and pepper. 
- Place 1-2 tsp of Dijon mustard on each fillet. 
- Cover generously with pistachio mixture. 
- Bake for 20 minutes or until cooked.
